Irish soda bread is a quick bread that is leavened with baking soda instead of yeast. While the Irish didn’t invent soda bread, it did become popular during the potato famine, where wheat was more readily available. The cross in the loaf helps the bread expand, although folklore says it’s made to “let the devil out” during baking for good luck. There are many versions of Irish soda bread, ours is slightly sweet with raisins and caraway seed, and is topped with turbinado sugar.
